How to Make a Low-Carb Meat and Vegetable Casserole without the Carbs of Rice, Pasta, or Potatoes

This recipe is for a very tasty casserole that is perfect for diabetics and others who monitor their intake of carbohydrates or starch. This dish contains no rice, no potatoes and no pasta, incredible but true! It 'made with ground beef, peppers, onions, shallots, eggs, etc. is a healthy, tasty casserole, economical and low in carbohydrates. Try this Pepper Beef Casserole very early for a delicious low carb meal the whole family will enjoy.

MEAT AND PEPPER CASSEROLE

1 / 2 pound lean ground beef

non-stick cooking spray

3 medium bell peppers, finely chopped

2 medium onions, finely chopped

2 tablespoons chopped green onion

1 / c. 4 tsp garlic powder

1 beaten egg

2 tablespoons chopped parsley

1 / 2 c. Tea of dried thyme

1 / c. ground black pepper 2 tea time

1 / 8 c. tea ground cloves

1 / 8 c. Tea allspice

In a large skillet, cook ground beef until browned. Drain the meat in a colander and rinse with lukewarm water. Let drain while preparing peppers and onions.

To prepare the peppers and onions: Wipe skillet with a paper towel to remove visible fat from meat. Spray nonstick cooking spray. A low heat, saute the peppers and onions for about 5 minutes until tender. Return meat pan and mix with garlic powder. Add the egg, parsley, thyme, black pepper, cloves and pepper. Stir to mix well. Spray a 2-Quart saucepan with a low non-stick cooking spray and spoon the mixture into the pot. Bake at 375 for 20 minutes or until casserole is set.
